Kathy’s version of Huevos Rancheros
1)Drain
one can of “original” Rotel tomatoes with green chiles, then warm in small
saucepan and place on simmer or hold. 2)Open
one can of Rosarita “traditional” refried beans, place in a separate small saucepan
and warm together with a few (maybe 4to 6 drops( dashes) of jalepeno hot sauce)
-my favorite brand is-Arizona gunslinger jalenpeno hot sauce – and a couple of
teaspoons of chilpolte adobo sauce. And about ¼ cupt of shredded cheddar cheese
(or cheese of your choice)simmer until ready to use. 3)Fry
up the amount of Corn tortillas for your servings ~ fry on both sides just till
slightly browned~but not too crispy or hard ~ drain on paper towels for a few
minutes, then, wrap tortillas in foil to retain heat until ready to serve. 4)Chop
1 to 2 green onions with white and green parts in small slices, along with
about 2 to 3 tablespoons of fresh cilantro
chopped. Save for garnish once everything else is done. 5)Fry
or Poach eggs for amount of servings 6)Place
fried corn tortilla on your plate, spread layer of hot refried beans on top of
corn tortilla, add a handful of shredded cheddar cheese to top, then place your
fried or poached egg(s) on top of beans, add the warmed Rotel tomatoes on top
of the egg, then garnish with the sliced green onions and sliced Avocado to
taste.
